Mexican Trash

Because I can't really think of another name for it, I call it Mexican Trash. It's sort of a Dorito casserole. And is seriously NOMMY.

You will need::

1 bag Nacho Doritos, crushed.
2C shredded chicken
2C shredded cheese--or more (I always use more!!)
1 Can Cream of chicken soup
1 Can ro'tel tomatoes
1/2C sour cream
1/2C milk
1/2 package taco seasoning (or more if you'd like)

Preheat your oven to 350. Spray a 2 quart casserole dish with nonstick spray.
Mix together all ingredients BUT Doritos.
Layer half the Doritos (about 2 cups) on the bottom, then spread half the chicken mixture, rest of the Doritos, and the rest of the chicken mixture. Add more cheese on top.
Cover with foil and bake for 35 minutes.

I usually double the recipe and cook it in a 9x13 pan for 45 minutes, just so we can have leftovers the next day.

Finished casserole!!!

What size should the bag of Doritos be?

Unknown said...

Given that she said half is about 2 cups, get whatever you feel will make about 4 cups of crushed chips. And anything left over is snacks!

Anonymous said...

In your Mexican Trash recipe, is the shredded chicken precooked / raw ?

Anonymous said...

When a recipe calls for shredded chicken it's usually already cooked. And with two cups needed that roughly equals two boneless skinless breasts that have been boiled. Hope this helps.

Anonymous said...

I find the name of the dish racist, and a lack of imagination.

Annomoyous said...

I love this casserole its so easy. My family and friends love it too. They think I cooked all day but takes 10 minutes to put together. I do not find this racist at all keep the name when I give the recipe out my friends get a big kick out of it.

Do you drain the rotel?

I find you to be a liberal dumbass that has nothing better to do than find things to piss and moan about.

I make a dessert called white trash. No one has ever complained. Lol

Unknown said...

Still laughing! Bahahaha

Anonymous said...

Lol because its White, add any minority and drama ensues.

Anonymous said...

Its not racist people! It's a Mexican spicy dish, it has alot of stuff unit that is fattening, so that's where trash comes from. It's a great casserole, just enjoy I and stop making everything about race.

Kristina said...

is this recipe already doubled or no?

Anonymous said...

This sounds good & will be on my list to make soon.
Sparkleeeemama I love your humor.
I totally agree with anonymous 10/4/14. Besides If the creator of this dish was a racist she wouldn't have given it this name.
Lighten up people

Unknown said...

The chicken isn't raw. Some used canned chicken. I personally use frozen chicken tenders and I bake them. I just add what amount of tenders I want and throw them in the oven at 350 degrees for about 30 - 45 mins allow to cool and shred.

Unknown said...

Mexicans do not use ingredients that are in this dish, I think it should be called "White Trash" it is racist because it's rude to say White Trash dish...I just noticed the name of the dish on Piniterest while looking for recipes, it catches your eye like really!!!

Unknown said...

Im gonna try monday

Anonymous said...

You can try it if you'd like, but having lived in the southwest for over a decade, I'll tell you the second part of the name is 100% correct, "Trash". I'll not be making this again.

Anonymous said...

That is more like a poor white trash casserole nowhere near Mexican. Mexican food does not utilize those ingredients or if you like better a welfare casserole that's not racist is it?

Anonymous said...

DO NOT MAKE... UGH

Anonymous said...

My gosh ppl. This is a recipe!! A very good recipe. The only one mentioning racism is the one's accusing. If racism enters your mind on a RECIPE, you're racial.

Anonymous said...

THIS IS DELICIOUS!! I doubled the recipe...used 3 good sized boneless breasts that I boiled. Baked in 9x13 pan for 45 mins. EVEN BETTER THE NEXT DAY! Thanks for sharing the recipe! Definitely a keeper for FOOTBALL FOOD!

Anonymous said...

Mexicans DO use the ingredients in this dish and NOT ALL OF US find it racist in the least bit! Get over it and move on with your petty little selves. This sounds awesome and I intend to make it for my MEXICAN family! Just saying...

Really people, build a bridge and get over it. Life is to short to short to make such a big deal over a recipe.

Anonymous said...

Nope, it's racist. Seems Dorito Bake would have sufficed.

Anonymous said...

I love the fact that someone managed to turn food into a political issue... Just everyone shut it and eat if you like nachos.

Anonymous said...

Why does everything have to be about race? It's all about the food.

Unknown said...

Why all the comments about the NAME? I think it is delicious, and the name is FINE and I am an UBER-LIBERAL!

Anonymous said...

This was delicious. My family loved it

Anonymous said...

Get over the racist talk. The food looks awesome and the name is funny. Sheesh.

Anonymous said...

I remember eating this very popular dish in the late 80's early 90's growing up in the south. My mom called it Doritos Casserole! So that's what I call it just because that's what I grew up calling it.

Anonymous said...

Drain the rotel?

Michelle in Texas said...

I'm Mexican and cannot wait to try this recipe tomorrow night for my family. It looks deliciously not racist. :) Thanks for sharing! xox

Anonymous said...

Does it really hurt you to be nice?? Someone was nice enough to share their recipe! If you can't say something nice then DON'T say anything at all. I for one like reading and trying different recipes.

Anonymous said...

Sparkleeee Mama
Thank You. Love your recipes.

Anonymous said...

But if you called it Dorito bake it would be mistaken for another dish that has a crescent roll crust and ground beef filling.... Get over yourself!

Unknown said...

Made this tonight and it is pretty good. Super easy, just boil and shred chicken and mix everything up. I omitted the milk because I didn't see the point. Also, not sure how you would eat it as leftovers, I think the chips would be too soggy if it sat around a few hours and was reheated. Overall though, my family enjoyed it and I will be making again.

Anonymous said...

Can't anyone find other things to do than complain. Grow up

Unknown said...

I will be making this tonight.
My step mom made this when i was young, cant remember the name all i remember was that it was great

Carol said...

Listen, lol, I don't care what ya call it, just call it trash for all I care. I really don't think anyone means to be racist, omg it's just a recipe title. Heck, call it honky trash, hehehe for all I care. Me and my son tried it, probably about 6 weeks ago and we loved it, and we're gonna have it again tonight. Enjoy!!

Anonymous said...

You people that want to complain about the name of the dish being "racist" are what's wrong with this country! Liberal idiots

Unknown said...

The real name started as Doritos Casserole

Anonymous said...

I didn't see anyone comet like this on the white trash casserole! Really! It's a freaking recipe. No one stood out and said " Mexicans are trash!" It's a name such as the "white trash "casserole shut up and get over your self!!!

Anonymous said...

lol, haven't we realized yet that everything is ALWAYS made into a race issue - even ridiculous things like a great sounding recipe! offend you? then don't read it, don't try it, click the little "x" for close ...it's really that simple folks.

Anonymous said...

I have this all ready and gonna put in the oven soon hoping I made it right. Wish me luck

Anonymous said...

I agree! Geeeesh! As if there are not bigger issues in this world to deal with, there ALWAYS has to be someone that finds something wrong with EVERYTHING!!

Anonymous said...

I'm gonna try this tonight hope it turns out alright

Go back to Mexico!

Carol said...

OMG!! racist stuff still being said. If you think the INGREDIENTS sound good, try it, if you don't think they sound good, then Don't try it!! hmmm simple as that. Get over it already!!! Me and my son are having MEXICAN WHITE TRASH CASSEROLE FOR DINNER TONIGHT!! Anonymous said...

Bahahahaha why does it always gotta be about race???? Geeeees people just eat and shut-up!

Anonymous said...

I made with beef and added refried beans and used cream of mushroom instead. It was amazing!!

Anonymous said...

Does anyone have the nutritional information on this dish?

Anonymous said...

I used to make this but used csmpbell cheddar cheese soup and cslled it chicken ala puke cuz thst is what it looks like when served.

Anonymous said...

Recipe aside: Our country survived slavery and the 1960's and Watts riots where blacks burned down their own town including their relatives grocery stores. We had "Affirmative Action" in the '70's Mayor Bradley in Los Angeles and Rodney King and his craziness, etc. Now the state of Paradise California is a welfare state. We were all surviving as American people of all colors until we became a racist nation during the Presidential campaign of Obama. Now we are racist. So now you can all bitch about my post. BTW I call my recipe "Mexican White Trash" Oh yeah I am a white girl from Los Angeles, California

There are more comments about the name of the recipe than comments about the dish itself. Get over yourselves, not everything is about race.

I can not believe how many people out there just seem to go in search of something to stir up crap about. I think the recipe sounds yummy and I don't care if it is call sh## on a stick I'm gonna to try it. If you people want make a difference find worthwhile cause and the proper forum and go at it.

Love it and will make again and I love the name because it does have a lot of trash in it and it's like a Mexican dish. ♡♡♡♡♡ love it and would like the white trash recipe. Thanks and why is everything about race to u people that bitch go somewhere else if u don't like it

Unknown said...

I have a household of picky eaters, and this recipe was a hit! Thank you for sharing. I find the comments about the name unnecessary and, as my mother taught me, if you don't have anything nice to say, then don't say anything at all...and just move on! So, back to the recipe-I recommend having some crushed doritos left over to sprinkle on top when served-they add a nice crunch. Also, it is great served with sour cream and olives. No, do not drain the rotels (at least in my experience). Thank you for an easy, no-fuss, weeknight dinner!

Cameron Clan.... said...

Obviously you woman have nothing better to do then complain about a name of a recipe.. Seriously.. Well it doesn't matter the name of it. It's good and I will defiantly be making it again.. My family loved it, I also saved some of the Doritos and sprinkled over the top for added crunch. Served it with Spanish rice and refried beans, husband also ate it with chips to scoop. I love different recipes when you are the only cook in the house it gets boring cooking the same thing over and over. So Thank you for sharing..

Anonymous said...

When did people turn into such cry babies...I am so grateful I grew up in a time when people were just people....never thought about getting offended. I am so going to make this.

Unknown said...

I've been reading these comments and they are killing me! Lol. Just make the damn food and eat it!

Anonymous said...

There is always one smart mouthed person in a crowd, your comments just fuel them on. Simply ignore them and they will go away. I will be making this recipe tomorrow. We're have Mexican Christmas Dinner. No we are not Mexican but we love Mexican food. Thanks for the recipe.

Anonymous said...

I totally agree with the comment of if you don't have anything nice to say don't say anything at all, this is about a recipe not about political correctness. We should worry about the something important not the name of a recipe. Look around you and see what is going on in the world.

Unknown said...

Ok this woman called her Dorito Dump casserole Mexican trash because Mexicans eat trash is that why? Really? We don't eat like that! It's not even real Mexican food! What if I called it white Trash instead? In her post she said she didn't know what to call it. Well why not call it what it really is a Dorito Dump casserole. There are plenty of easy dumb casseroles name it what it really is!

Anonymous said...

I'd like to make this simply because someone is butthurt about the name of the dish!

Anonymous said...

That makes no sense

Anonymous said...

Literally shut the fuck up. It isn't racist because you ARE white trash.

Anonymous said...

This isn't Mexican food No Mexicans do not use this crap. Only Mexicans to find it acceptable are the ones that have no clue and where born in the US. The name is Offensive!what if we called it white trash dish or call it a Nigger dish! Same difference!

Anonymous said...

You love Mexican food but this isn't Mexican food at all. This is an American dish. Americans sure like to make up dishes and call it as if it where from some other country.

Anonymous said...

Because its offensive! No one would have been so bent over it if they didn't call it a cultures name followed by trash. This is trash alright. American trash put together thinking its mexican food.

Anonymous said...

Because it is Offensive to call anyone's culture trash. It really is a racist name plain and simple. And has nothing to do with Mexican food. Even if it is just a stupid recipe how are you going to expect people of that culture not to be offended.

Anonymous said...

If you put chicken and some water in a crockpot for the day. When its done it pulls apart so good.

This recipe was so easy. nutritious, feeds a croed, & is delicious left-over and frozen! I used (4) Chicken Breasts fillets, sliced in strips and sautΓ©ed in a Pan over Med. heat w olive oil/butter, fresh garlic and salt to taste. I let them cook down & brown, cool and pull apart as pieces. Then, I followed the recipe - so easy; I doubled it! And, I served in over a bed of brown rice/Bismati mixed rice in Salad Bowls w Lettuce on the top! It was like a chicken taco salad and is delicious!

We have a Circle Mtg 2/4th Friday @ a home - potluck. I will make it again to serve there! Our members will love it too! Delicious!!! Thank you, Sparlee Momma! It is divinely inspired! So glad you have shared it w us! Blessings!

I'm going to make it for a potluck and hope its as good as everyone says. But I must say I've never enjoyed reading comments as much as I've enjoyed these. I'm calling it Mexican Trash when asked what it is and I'm hoping I don't offend the other 3 races that will at the potluck. Its all about 'inclusion' you know! You liberals are too much!!

The name of this dish is the least of its problems...high in fat...almost your entire day's intake of sodium...no fresh vegetables. Of course, only something so sorely lacking in nutrition is attributed to another country..Why couldn't it be "American Trash", in tribute to the USA, the most obese country on the planet?

Anonymous said...

I just took it as not being authentic, must you get offended by everything.

Anonymous said...

To Anonymous: I want to try with ground beef also! Did you still use everything else in the recipe (curious about the cream of chicken soup with it -- or did you try something else?)
Or any suggestions from anyone? I may even add pintos or refried beans and corn

An hour?? That's way too much... Get a meat thermometer and boil until the chicken has an internal temp of 165 degree.

Anonymous said...

Just wondering can you add Velveeta to your dish as well? Possibly when you add your rotel. I use it when making my chicken spaghetti (similar to this dish) and it always adds more of the cheesy flavor.

The easiest way to make the shredded chicken is to cook 2 chicken breasts in 2 cups of water in a slow cooker on low for 7 1/2 hours. It shreds easily and falls apart.

Unknown said...

Flaky

Unknown said...

This is one of my families favorite meals, so easy. They love it so much we have had to quadruple the recipe.

Anonymous said...

I make something similar. You can use tortilla chips as well.
2 cups of cooked chicken.
(However you prefer)
1 can of cream of mushroom
1 can cream of chicken
1 can black beans
1 can corn
1 can rotel
1 can green chili's
1/2-1 pack of taco seasoning or homemade taco seasoning
1/2 cup sour cream and 8oz of shredded cheese.
Pretty much drain and mix everything together and cook just like this recipe recommends and my family loves it.

Been making this recipe since 2000 while working at Sara Lee (meat plant) as I got the recipe from a great co-worker. It’s called to us Mexican Chicken Casserole. No sour cream in our recipe & everything is same but that & use cream of celery in place of the sour cream. It’s amazing how much this recipe has gotten so changed & I truly like our version over all of them. We also use queso cheese dip along with shredded cheddar cheese & OMG is it good. For those asking my recipe calls for the 10 oz bag of Cheese Doritos. Happy Cooking :)

All the comments about the name of the recipe is ridiculous. It’s a recipe not a person grow up You have to get a thick skin. Can’t wait to try the recipe πŸ‘

I’ve rarely seen such racist rubbish in my life! What if she named it TRAILER PARK TRASH? Would anyone like that name better? I don’t think the name was chosen with racist intent. Though I am not Mexican, I think the name is extremely inappropriate. SUGGESTION? How about renaming it MEXICAN MANNA?

I just came here for the comments. I knew there would be a lot of childishness. I was not disappointed.

I pray for all of you. This is going to be good meal. I love MEXICAN FOOD. It’s not racist to love another cultures food. And there are no stupid questions. Never be afraid to ask a question. Let’s live in love. God bless you all. Sincerely.

This is really very scary that one little recipe and one little question can cause such hate and malicious comments. My granddaughter is learning to cook and asks tons of questions cause she is just learning! Please be kind and think about others not as knowledgeable about cooking as you.

Does anyone know if the chips get soggy? What flavor of doritos works best?
