Mexican Trash

Because I can't really think of another name for it, I call it Mexican Trash. It's sort of a Dorito casserole. And is seriously NOMMY.

You will need::

1 bag Nacho Doritos, crushed.
2C shredded chicken
2C shredded cheese--or more (I always use more!!)
1 Can Cream of chicken soup
1 Can ro'tel tomatoes
1/2C sour cream
1/2C milk
1/2 package taco seasoning (or more if you'd like)


Preheat your oven to 350. Spray a 2 quart casserole dish with nonstick spray.
Mix together all ingredients BUT Doritos.
Layer half the Doritos (about 2 cups) on the bottom, then spread half the chicken mixture, rest of the Doritos, and the rest of the chicken mixture. Add more cheese on top.
Cover with foil and bake for 35 minutes.

I usually double the recipe and cook it in a 9x13 pan for 45 minutes, just so we can have leftovers the next day.

Finished casserole!!!

Yes! It's great with good ground beef. Brown it & drain well. Yum, yum.

I am going to make this recipe and take it to the Columbia River and share it with a group of wonderful people on a special day and chill with some sweet tea, iced of course .They are of all from different ethnic backgrounds love them all๐Ÿ’•
I actually laughed and laughed at the comments I read here but it saddened me too read the real hate I felt in print.

Hey Anonymous! (I know there’s a TON OF ANONYMOUS people who have commented. Apparently NO ONE KNOWS HOW TO ADD THEIR ACTUAL NAME/SCREEN NAME). Anyway, I’m talking to the one who says you’ll get sick if you’re only cooking your chicken for 20~35 minutes, I’m fairly certain that a few chicken breasts are going to be cooked just fine in 20~35 minutes if boiled on top of the stove, it shouldn’t be an issue. HOWEVER, even IF the chicken isn’t 100% done and it has to be chopped instead of shredded, it’s going to cook even MORE in the oven once it’s incorporated as part of the casserole, as a matter of fact, it’s going to bake for another 30+ minutes! I think it’s safe to say that it’s going to be fully cooked at that point without a doubt!
Why do you all have to be such freaking DRAMA QUEENS ABOUT EVERYTHING???!! PLEASE, find a new HOBBY, one that doesn’t affect others by BASHING THEM ON THE INTERNET!!

As for the other “Anonymous” person who said to BOIL THE CHICKEN FOR AN HOUR, HOLY FREAKING CRAP!! You’re not trying to kill the piece of chicken, just cook it until it’s done!! That thing is going to be nasty AF, stringy, flavorless RUBBER if you BOIL IT THAT LONG!!! Just stay on top of it and check internal temp!! BETTER YET, BAKE IT IN THE OVEN with some chicken broth OR COOK IT IN AN INSTANT POT OR CROCKPOT before “shredding”!! Geez, even cook it in a skillet on top of the stove, any of those options will provide you with a FARRR BETTER FINAL PRODUCT THAN BOILING THE CRAP OUT OF IT FOR AN ENTIRE HOUR!!!! ๐Ÿคข๐Ÿคข๐Ÿคฎ๐Ÿคฎ๐Ÿคฎ๐Ÿคฎ๐Ÿคฎ

There are a lot of great food that comes from Mexican cooks. There is also a lot of great foods from other countries, including America. You Mexicans should be proud of your foods and get over the racist thing. Hope you enjoy American white chocolate, White Trash, white tea, white rice, (which, by the way, I have never heard a Chinese person complain about the white rice) as much as I do.

Nacho cheese Doritos work best. I don't put milk in mine. My chips don't get soggy. I also sometimes use ground beef and cream of mushroom or cream of celery vs chicken and cream of chicken. A good add in is Spanish rice.

It’s absolutely not racists. I have lived in Texas my entire life. I’m Caucasian and was considered a minority in my school. I would call this recipe “Mexican” simply based on the ingredients. There is nothing racists about it. Get over yourself. Make it, you might like it.
